In the Summer, we love a good salad, especially one that’s easy, refreshing AND includes a grilled element. This one checks ALL of those boxes! It’s the perfect side for a hot Summer day.
Grilled Corn Salad
2 ears of sweet corn, husks and silks removed
1 avocado, cubed
1/4 red onion, diced small
1 cucumber, cut into coins, then quartered
10-12 small tomatoes, cut in half
1 T. cilantro, chopped
salt and pepper to taste
Spray the ears of corn with avocado oil and put on the grill over low heat.
Once charred (15ish minutes), remove from the grill and cut off the kernels.
Combine the corn, avocado, onion cucumber, and tomatoes in a bowl.
Gently toss and sprinkle salt and pepper to taste. Add cilantro and serve.
